The knit pulls sweat off your skin through capillary channels, then spreads it across the outer surface so it evaporates fast. That's why it stays comfortable pulled up over your mouth instead of going damp and clammy.
6% elastane means it stretches horizontally and vertically, so it moves with you and springs back to shape. Pull it up, pull it down, wear it as a headband - it won't sag out after a week.
At 185gsm it rolls down to nothing and lives in a jacket pocket, a pannier or a glovebox. The best protection is the protection you actually have with you.
A gaiter fails in two ways: it goes damp and clammy against your face, or it stretches out and stops staying where you put it. Both are fabric problems.
The 94% polyester knit handles the first - tiny capillary channels move sweat off your skin to the outer surface, where it spreads wide enough to evaporate quickly rather than sitting there. The 6% elastane handles the second, stretching in both directions and recovering its shape every time.
Keep it in a pocket and forget about it until the wind turns or the sun comes out from behind a cloud. Then it's up over your neck and face in a second, and rolled away again just as fast.
UPF is the sun protection rating for fabric. UPF 40 blocks 97.5% of UV radiation, letting only 1/40th through to your skin - which puts it in the "Excellent" protection band. Unlike sunscreen, it doesn't sweat off, wash off or need reapplying.
